    以脫脂牦牛乳為試驗材料,發(fā)酵3.5h滴定酸度為試驗指標,,在不同菌種最佳組合方式篩選的研究基礎(chǔ)上,,利用響應(yīng)面Box-Behnken中心組合試驗研究了4株篩自牧區(qū),、發(fā)酵性能優(yōu)良的菌種:保加利亞乳桿菌(MGD1-3),、嗜熱鏈球菌(MGB39-5),、嗜熱鏈球菌(G81-1),、植物乳桿菌(BM5152)不同接種比例對牧區(qū)奶干渣發(fā)酵效果的影響,。結(jié)果表明,,優(yōu)化得到最優(yōu)組合式發(fā)酵劑為:MGD1-3體積分數(shù)3.06%,、MGB39-5體積分數(shù)0.64%、G81-1體積分數(shù)0.55%,、BM5152體積分數(shù)2.04%,,滴定酸度為75.87°T。為了便于實際操作,,確定最終體積接種比為:MGD1-3∶MGB39-5∶G81-1∶BM5152=30∶6∶5∶20,,接種量體積分數(shù)為6.0%,該條件下進行3次平行試驗,,得到滴定酸度平均值為74.21°T,;將接種優(yōu)化后組合式發(fā)酵劑制成的奶干渣(試驗組)與牧區(qū)采集奶干渣(對照組)進行感官與理化指標比較,結(jié)果表明該組合式發(fā)酵劑發(fā)酵性能優(yōu)良,。

    Abstract:

    Skimmed yak milk was selected for this research and the titratable acidity at 3.5h as the test indicator. Box-Behnken central composite experiment was designed based on optimal combination of fermentation starters to research the effect of Lactobacillus delbrueckii subsp bulgaricus(MGD1-3), Streptococcus thermophilus(MGB39-5), Streptococcus thermophilus(G81-1), and Lactobacillus plantarum(BM5152), which were screened from pastoral areas to the titratable acidity. The result showed that the optimal combination of fermentation starters was MGD1-3 3.06%, MGB39-5 0.64%, G81-1 0.55%, and BM5152 2.04% and the titratable acidity was 75.87°T. In order to facilitate the practical operation, the proportion of MGD1-3∶MGB39-5∶G81-1∶BM5152=30∶6∶5∶20 and 6.0% of inoculum size based on volume fraction were selected. Under these conditions, the average titratable acidity was 74.21°T of three parallel trials. Compared with the sensory and physical and chemical indicators of milk dried residue came from optimized combination of fermentation starters and pastoral areas, the result showed that the optimized combination of fermentation starters was reliable.
