    摘要:

    構(gòu)建了恒溫下的冷鏈運(yùn)輸羅非魚(yú)微生物生長(zhǎng)動(dòng)力學(xué)模型,,得出了溫度變化對(duì)微生物生長(zhǎng)狀態(tài)的影響,然后對(duì)所記錄溫度進(jìn)行了處理,,并結(jié)合Baranyi模型得出了波動(dòng)溫度下微生物的生長(zhǎng)動(dòng)力學(xué)模型,,并且用模擬試驗(yàn)進(jìn)行了驗(yàn)證,,決定系數(shù)為0.956,,均方誤差為0.165,,偏差因子為0.994,,準(zhǔn)確因子為1.134,。結(jié)果表明,,所構(gòu)建的微生物生長(zhǎng)動(dòng)力學(xué)模型能夠擬合實(shí)際的冷鏈物流中羅非魚(yú)微生物的變化情況。

    Abstract:

    The microbial growth kinetics model at constant temperature was built up. The effect of variable temperature on microbial growth state was found. Then the recorded variable temperatures were processed. Microbial growth kinetics model combined with Baranyi model under variable temperatures was obtained. A simulation experiment was also carried out to validate the accuracy of model. The determination coefficient was 0.956, the root mean square error was 0.165, the deviation factor was 0.994, and the accuracy factor was 1.134. The results showed that the model was adaptive to predict the growth of microbiology in the actual cold chain logistics.
