    摘要:

    為提高大豆糖蜜的抗氧化活性,,將大豆糖蜜溶液與纖維素酶溶解于pH值5.0的50mmol/L Tris-HCl 緩沖液中,,于50℃保溫30min,。對(duì)比了酶解前后大豆糖蜜的清除DPPH自由基能力和還原力,,并分析了異黃酮的組成差異,。結(jié)果表明:達(dá)到50% DPPH自由基清除率,,需未處理樣品17.15g/L,,而處理樣品僅為9.19g/L,。在相同的質(zhì)量濃度下,處理后的大豆糖蜜還原力要高于未被處理的大豆糖蜜,。纖維素酶所具有的β葡萄糖苷酶活性能將大豆糖蜜中的大豆苷和染料木苷完全水解為大豆素和染料木素,,這是大豆糖蜜酶解處理以后抗氧化能力提高的原因。

    Abstract:

    To increase the antioxidant capacities, soybean molasses were incubated with cellulase at 50℃ in Tris-HCl buffer (50mmol/L, pH value was 5.0) for 30min. The half-maximal scavenging concentrations of treated and untreated soybean molasses decreasing DPPH 50 percent (SC50) were 9.19g/L and 17.15g/L, respectively. The reducing power of cellulose-treated soybean molasses is higher than that of untreated soybean molasses at the same concentration. HPLC analysis revealed that cellulase could hydrolyze all daidzin and genistin in soybean molasses into daidzein and genistein. This may partially contribute to the enhanced antioxidant activity of soybean molasses by using cellulase.
